Ingredients

1 tablespoon Olive Oil
1 lb Ground Turkey
1 medium Onion, diced
2 cloves Garlic, minced
1 (16 ounce) package Frozen Mixed Vegetables
4 cups Chicken Broth
1 bag of Baby Spinach
1/2 teaspoon Pepper
1/2 teaspoon salt

Directions

  1. In a large skillet over medium heat, add olive oil and heat until sizzling. Cook ground turkey until browned about 5-6 minutes, stirring to break up the meat. Add garlic until softened, about 3-5 minutes. Add to the slow cooker.
  2. Add remaining ingredients. Cover and cook on high for 4 hours or on low for 8 hours. Before serving, add the bag of baby spinach.
