Ingredients

1/2 lb butter (salted)
3 tbl flour
1 large onion chopped
1 qt whole milk
16oz can cream corn
1 can cream of potato soup
1/4 tsp cayenne (more)
1/4 lb grated swiss cheese (1 bag)
1 pint picked crab or lobster meat
2 tbl finely chopped green onions
2 tbl snipped parsley

Directions

In large heavy pot, melt butter; stir in flour until well blended but not brown; add onions, cook on medium until soft ~10min (usually more); after onions are softened add everything else and simmer for 25-30 minutes. Green color of parsley and onions should fade.
