Ingredients
3 Garlic Cloves (minced)
1/4 tsp Fennel Seed (crushed)
1/4 tsp Red Pepper Flakes
1 lb Ground Turkey
2 tbs Olive Oil
1 Large Onion (chopped)
1 pkg Frozen Chopped Spinach (thawed and drained)
4 oz Can Chopped Chilis
6 Eggs (lightly beaten)
1 tsp Oregano
Ground Pepper
12 oz Monterey Jack Cheese (shredded)
Directions
- Mix Fennel and Red Pepper with Ground Turkey
- Saute Onion and Garlic in oil until soft, remove from pan and set aside
- Brown Turkey, add Onions, Garlic, Spinach and Chilis.
- In a separate bowl, beat eggs and add oregano and ground pepper. Add to meat.
- Stir gently until eggs are almost set. Add cheese, cover on low until cheese is melted.

Dish goes well with butter noodles or Gluten Free Penne.
