Ingredients

3 Garlic Cloves (minced)
1/4 tsp Fennel Seed (crushed)
1/4 tsp Red Pepper Flakes
1 lb Ground Turkey
2 tbs Olive Oil
1 Large Onion (chopped)
1 pkg Frozen Chopped Spinach (thawed and drained)
4 oz Can Chopped Chilis
6 Eggs (lightly beaten)
1 tsp Oregano
Ground Pepper
12 oz Monterey Jack Cheese (shredded)

Directions

  1. Mix Fennel and Red Pepper with Ground Turkey
  2. Saute Onion and Garlic in oil until soft, remove from pan and set aside
  3. Brown Turkey, add Onions, Garlic, Spinach and Chilis.
  4. In a separate bowl, beat eggs and add oregano and ground pepper. Add to meat.
  5. Stir gently until eggs are almost set. Add cheese, cover on low until cheese is melted.

Dish goes well with butter noodles or Gluten Free Penne.
