Chicken Waldorf Salad

Ingredients

  • 12 oz boneless, skinless Chicken Breast (cooked, shredded or cubed)
  • 2 medium Red and/or Green Apples (coarsely chopped) approx. 2 cups
  • 1/4 C Celery (thinly sliced)
  • 1/3 C Dried Tart Cherries
  • 1/3 C Pecans or Peanuts (coarsely chopped)
  • 1/3 C Mayonnaise Dressing
  • 1/3 C Sour Cream
  • 1 to 1 1/2 tsp Dried Rosemary (crushed)
  • 1 tbs Lemon Juice
  • 1 tbs Honey
  • Lettuce Leaves

Directions

  1. Combine Chicken, Apples, Celery, Cherries and Nuts to medium bowl. For dressing, stir together the Mayonnaise Dressing, Sour Cream, Rosemary, Lemon Juice and Honey in a small bow.l. Stir dressing into Chicken mixture just until evenly coated.
  2. Refrigerate covered for up to 24 hours. Serve on lettuce leaves.
